Tomato, Onion, and Herb Salad

This is a great salad that goes perfectly as a flavorful side salad with steak or poultry.
Ingredients: 
  • 1 large tomato, cored and cut into wedges
  • 1 small onion, thinly sliced
  • 1 TBSP olive oil
  • Salt and pepper to taste
  • 1 TBSP apple cider vinegar
  • 3 drops Capella Spearmint
  • 3 drops Clear Stevia
  • 1 TBSP roughly chopped fresh mint and basil leaves
Directions: 

1. Toss together the tomato and onion in a small bowl and set aside.

2. In another small bowl, whisk together the remaining ingredients, Pour over the tomatoes and onions and allow to sit for 15 minutes before serving.

 

M1 Caution Modification: Add 1/4 cup diced mozzarella cheese.

M2/Life Modification: Toss with 1 cup cooked whole wheat pasta and serve at room temperature.
