1. In a large bowl, combine the broth, water, Capella and Stevia drops, cumin, and lemon juice.
2. Stir in the cucumbers and mint and set aside for 15 minutes.
3. Working in batches, puree the cucumber mixture in a blender until smooth and transfer to a clean bowl. Season to taste with salt and pepper.
4. Serve chilled, garnished with the diced cucumber.
