1. Preheat oven to 400 degrees F. Line a baking sheet with foil.
2. In a shallow bowl combine the lemon juice, hot sauce and Stevia. Marinate the chicken tenders in the mixture, turning occasionally, for 30 minutes.
3. In a shallow bowl combine crumbs, garlic powder, salt and pepper. Dip the tenders in the crumb mixture, pressing firmly to adhere and place on the prepared baking sheet.
4. Bake until the chicken is cooked through and the outside begins to brown, 25 to 30 minutes. Serve immediately alone or on a bed of lettuce.
